Ingredients

For the Potato Filling

  • 4 boiled potatoes

  • 1 tablespoon oil

  • 1 teaspoon mustard seeds

  • 1 teaspoon cumin seeds

  • 1 tablespoon chopped garlic and ginger

  • 1–2 green chilies, chopped

  • A few curry leaves

  • 1/2 teaspoon turmeric powder

  • Salt to taste

  • 2 tablespoons fresh coriander, chopped

For the Batter

  • 1 cup gram flour (besan)

  • 1/4 teaspoon turmeric powder

  • Salt to taste

  • Water as needed

Other Ingredients

  • Pav buns

  • Dry garlic chutney

  • Green chutney

Steps

1. Prepare the Spiced Potato Filling

Start by mashing the boiled potatoes and keeping them aside.

Heat oil in a pan and add mustard seeds and cumin seeds. Once they begin to crackle, add chopped garlic, ginger, green chilies, and curry leaves. Séauté for a few seconds until aromatic.

Add turmeric powder and salt, then mix well.

Now add the mashed potatoes and fresh coriander. Mix everything together and cook for about 2 minutes until the flavors combine beautifully.

Allow the mixture to cool slightly, then shape it into small round balls.

2. Prepare the Besan Batter

In a bowl, add gram flour (besan), turmeric powder, salt, and water.

Whisk everything together until you get a smooth batter with a coating consistency — thick enough to cover the potato balls evenly.

This golden besan coating is what gives Vada Pav its iconic crispy texture.

3. Fry Until Golden and Crisp

Heat oil for deep frying.

Dip each potato ball into the batter and carefully place it into the hot oil.

Deep-fry until golden brown and crisp on the outside.
