Rajma (red kidney beans) when thoroughly boiled in a pressure cooker, becomes surprisingly creamy. Combined with the richness of ghee, it creates an exceptionally rich taste. For a thicker consistency, simply add a bit more ghee. With this, your vegetarian feast is ready to be served.
【Ingredients】
- Rajma (Red Kidney Beans): ½ cup
- Black Beans (Urad Dal, Black): ½ cup
- Onion (Chopped): 1½ cups
- Tomato (Chopped): ½ cup
- Ginger: 2 tablespoons
- Garlic: 2 tablespoons
- Cinnamon Stick: 1 piece
- Bay Leaf: 3-4 pieces
- Green Chili: 2 tablespoons
- Turmeric Powder: 1 teaspoon
- Coriander Powder: ½ teaspoon
Ghee: 1½ tablespoons
Salt: To taste
Lemon Juice: 2 tablespoons
Fresh Coriander: As required (for garnish)
【How to make】
*Boiling Time: The longer the beans are soaked, the shorter the boiling time. If soaked for about 3 hours, they will take approximately 1 hour to boil. If soaked for more than 8 hours, the boiling time will be reduced to about 30-40 minutes. For soft and tender beans, it's recommended to soak them overnight.
*Using a Pressure Cooker: If you have a pressure cooker, you can boil the beans more quickly and achieve a tender result. The beans are done when steam has been released 7 to 8 times.
*Tip: The key to making the beans delicious is to boil them until they reach your desired softness. Be sure to check their texture while cooking.
2. Add ghee to a frying pan and heat over low flame. Add the whole spices & ginger garlic paste & sauté them until fragrant. Then add onions and sauté until they turn transparent to a light golden brown.
Tip: It's important to keep the heat low to prevent the whole spices from burning. You want the spices to bubble slightly and dance in the oil. Also, make sure to use the specified amount of oil, as this allows the spices to fully infuse their aroma into the oil, making the curry more flavorful.
3. Add the tomatoes and sauté for about 30 seconds. Then, add the spices and mix well.
4. Add the beans along with their broth to the mixture. Season with salt, and bring it to a boil. Then, stir in the lemon juice.
*If you have an excess of broth, do not add it all at once. Instead, gradually add the broth until the desired thickness is achieved. You may not need to use all of it.
5. Add fresh coriander as a garnish, if desired, and serve in a bowl.
