Ambika Makhana are puffs made by roasting dry seeds of Euryale ferox. Makhana seeds are also called fox nuts, or lotus seeds, come from a plant called Euryale Ferox which grows in the stagnant water of wetlands or ponds in eastern Asia, southern Asia and northeast India. The Indian state of Bihar produces 90% of the world's fox nuts. The seeds of fox nut are roasted, which causes the seed to pop like a popcorn kernel.
