-Place poha in a sieve.
-Rinse gently under running water for a few seconds.
-Drain completely.
-Let it rest for 5 minutes to soften.
-Tip: Do not soak or squeeze โ€” poha can turn mushy.

-Heat oil in a pan on medium flame.
-Add mustard seeds and let them splutter.
-Add curry leaves and green chilli.
-Tip: Keep flame medium to avoid burning the curry leaves.

-Add chopped onion (optional).
-Sautรฉ lightly until soft but not browned.
-Add turmeric and salt.
