Kesar MangoIt is said that production of Kesar mangoes began in Gujarat , North India , and they are characterized by their medium-sized, round shape and unique, sweet aroma. The fruit is juicy, soft, and has a rich flavor. Kesar mangoes are rich in vitamins A, C, E, dietary fiber, and potassium, and also contain antioxidants.

When used in cooking, they are used in desserts, smoothies, ice cream, mango pickles, chutneys, and various other dishes.
In India, they are rich in vitamin C and are sometimes used as an ingredient in skin care products to keep skin firm and youthful.

Here we will introduce a recipe for Kesar Mango Kulfi from among the many recipes that use Kesar mangoes.

Kesar Mango Kulfi
2 cups of milk
1 cup of condensed milk
1 cup of fresh cream,
choppedKesar Mango...1 cup
squashedGreen Cardamomseeds...1/2 teaspoon *
choppedpistachio(unsalted)...1/4 cup

1. Place milk in a thick-bottomed saucepan over medium heat, stirring frequently.
2. When it starts to bubble, reduce heat and simmer, stirring occasionally, for 15-20 minutes until the milk is reduced to half its original volume.
3. Add condensed milk, cream, Kesar mango, and green cardamom to the second saucepan and mix well.
4. Simmer for a further 10-15 minutes, stirring occasionally, until thick and creamy.
5. Remove the pan from heat and allow to cool to room temperature.
6. Pour into kulfi molds, small bowls, or katoris and freeze for at least 4 hours until firmly set.
7. Remove from the mold or bowl, cut into bite-sized pieces, sprinkle chopped pistachios on top as a garnish, and serve.
* You can also use green cardamom powder (1/2 teaspoon) or green cardamom (3-4 pieces with the skin on) instead of the chopped green cardamom seeds (if using whole cardamom, remove them after step 4). A creamy , sweet Kesar Mango Kulfi
