What is Panch Phoron?

The term "Panch Phoron" translates to "Five Spices," where "Panch" means "five" and "Phoron" refers to "spice," particularly those that are tempered in oil to release their full aroma.

How to Make a Spice Mix:

  1. Combine equal amounts of five whole spices of your choice.
  2. Mix thoroughly to ensure an even blend.

Note: If you are concerned about bitterness when stir-frying, consider reducing the amount of fenugreek (methi) seeds slightly.

 

Potato Sabzi with Panch Phoron:
【Ingredients】
  • Panch Phoron: 1 teaspoon
  • Oil or ghee: 1.5-2 tablespoons
  • Potatoes: 2 medium-sized (cut into bite-sized pieces)
  • Turmeric powder: 1/2 teaspoon
  • Red chili powder: 1/3 to 1/2 teaspoon (adjust to taste)
  • Salt: 1/2 teaspoon (adjust to taste)
*You can also use sliced potatoes into 5mm to 1cm pieces.

【How to make】
  1. Heat oil or ghee in a frying pan over low to medium heat.
  2. Add Panch Phoron and let it temper until fragrant, being careful not to burn it.
  3. Add the potato pieces and fry for a few minutes.
  4. Add turmeric powder, red chili powder, and salt. Mix well.
  5. Cover and cook on low heat for 10 to 15 minutes, or until the potatoes are tender.
  6. Remove the lid and check if the potatoes are cooked through.
Optional: You can add sliced green chilies during step 3 for extra heat. For a tangy finish, sprinkle a pinch of amchur powder before serving.
